The one, most important thing I’ve found for making homemade pizzas is the Uuni oven. For years I’ve tried so many different tools. I’ve tried a cookie sheet, the grill, a pizza steel, a pizza stone, and other countless amount of tools. Nothing seemed to get the bottom to cook like a restaurant’s, and the crust never seemed to get crispy. I found out about Uuni a little over 6 months ago, and it has been fantastic. It solved every problem that I had with the other techniques, by getting the crust super crispy, and pizza perfectly done. The best part — it cooks pizza in literally 90 seconds. It’s unbelievable.

I’ve used this pizza dough for a long time now, and it is by far the best recipe I’ve tried. I totally recommend it to start, and from there, you can adjust some of the salt and cake-yeast levels, as well as some other spices you might enjoy in the dough to your liking.
-4 fresh roma tomatoes; diced, and crushed
-Fresh oregano; finely minced; to taste
–Tellicherry Pepper; to taste
–Icelandic Sea Salt; to taste
(The Tellicherry Pepper, and Icelandic Sea Salt is from my dad’s spice company, and they are outstanding. I totally recommend trying these as well. So aromatic, and burst with flavor.)
-Onion powder; to taste
-2 tbsp grated parmigiano reggiano
-BelGioioso cheese; ripped into medium sized chunks, or cut into thin round circles
-Provolone cheese; use half the amount of provolone cheese to BelGioioso cheese
-3 Tbsp of freshly grated parmigiano reggiano
After making the dough and stretching it out, spoon over enough sauce to cover the pizza dough, but be sure to leave a little room near the sides of the crusts so it doesn’t seep out. Now, sprinkle your three cheeses on the pizza. Grind some fresh pepper over it, and drizzle a little bit of extra virgin olive oil on top of it. Be sure to add any toppings that you prefer now as well.
After your Uuni oven has been preheating for 15-20 minutes, you’re all set to go. Slide in your pizza, rotate it every so often, and after 90 seconds, you’ve got yourself a restaurant-quality delicious pizza.

Holiday sugar cookies recipe:
Yields 24 cookies
2 1/2 cups all purpose flour
1 1/4 cups sugar
1 tsp baking powder
1 1/2 sticks of softened butter
1 tsp vanilla extract
1/4 tsp almond extract
Pinch of salt
In a mixing bowl, beat together butter and sugar on medium speed for about 2-4 minutes. While this is mixing, combine flour, baking powder, and salt in a separate bowl. Add eggs, one at a time until each one is beaten into the cookie dough smoothly. Next, add the vanilla, and almond extract, followed by the dry ingredients. Be sure to beat this on low speed so you don’t get flour everywhere!
Preheat your oven to 375 F°.
Let the cookie dough sit in the refrigerator for about 20-30 minutes or you can put this mixture in the freezer for about 5 minutes until the dough is easier to work with.
Lightly flour a work surface and roll the dough out. No need to actually measure the width, but be sure to leave them approximately a 1/2 inch thick or thinner.
Bake for 8-12 minutes, and check the cookies occasionally since all ovens are different. They will be a light golden color, but make sure they’re not too dark.
Let cool for a while before icing.
1 1/2 cups powdered sugar
1-2 tbsp whole milk
1/2-1 tsp vanilla extract (depending on how much vanilla you like!)
1-2 tbsp corn syrup
Food coloring of your choice
Whisk together powdered sugar, milk, and vanilla extract in a bowl. Add corn syrup and continue to whisk. Finally, add enough food coloring to your choice, or divide the icing into several bowls to dye the icing different colors. If planning to use multiple colors for your icing, make a double batch! (It doesn’t take long time to make!)
